Classic French Vanilla Ice Cream

Hello fellow ice cream lovers! We are very excited to be posting this recipe today. As you all know, we are quite attached to our ice cream maker (it is one of the most loved and well worn appliances in the kitchen), and there isn't a week that passes that we don't experiment with various new flavours. Let me tell you, this French Vanilla stands head and shoulders above them all. Keep in mind that I may be a tad biased, seeing as I was that kid who would take a giant silver spoon to the entire french vanilla ice cream container (I'm classy like that). Having said that, this recipe also passed with flying colours and echoes of "encore" from friends and family, so it is not just my sweet tooth talking.  This dessert is made with whole organic cream, and as a result - it is perfectly decadent, and has a gentle vanilla flavour that envelops your tastebuds. You can use coconut milk as a dairy-free alternative if you aren't ready to embrace the pure satisfaction of heavy cream. There is nothing better than a bowl of this ice cream and cuddles with your hunny on Friday night... or Saturday. Or both.

But in all seriousness, aside from indulging in delicious food, we will also be spending some quality time this weekend with our friends from the Toronto-GTA Paleo Life group. They are hosting a fermentation seminar on Saturday, and we are really looking forward to it. If you remember from my earlier posts, fermentation is an area that I have wanted to explore for some time now. These are foods that I grew up with (pickled beets, pickles, kefir, kombucha, saurkraut to name a few), and both Jon and I cannot wait to learn more about how to make them ourselves.

We will be sure to update you on what we learn on Saturday, but in the meantime: Go eat some ice cream.

TIME: 30 min (approx)

YIELD: 2-4 servings (depending on your portions)

INGREDIENTS:

500 ml organic whipping cream (or 1 can full fat coconut milk for dairy-free substitute)

1 egg (free-range)

2.5 tbs raw honey

1 tbs vanilla bean powder (or extract to taste)

PROCESS:

1. Blend all ingredients together in a mixing bowl using a hand mixer for approx 1 min (no longer or you will start to get whipped cream!)

2. Turn on your ice cream maker and pour in your mix. Follow the directions on your particular model.

3. This amount of ice cream should only take about 30 minutes to become the perfect consistency. A double batch may take 5-10 minutes longer.

4. Remove from ice cream maker and experience this orgasmic classic ice cream. Store extras in the freezer... duh.
